Grand Hyatt Kochi Bolgatty proudly relaunches its cocktail program with The Bold Naadan – a deeply rooted yet refreshingly modern drinks menu that captures the heart of Kerala through nine evocative chapters. Designed for the spirited resident and the curious traveller alike, the menu is a narrative-led experience where each cocktail draws inspiration from Kerala’s land, people and coastal rhythms.
Centred around the three T’s – Taste, Tradition and Technique – the menu is crafted using forward-thinking methods like sous vide, pickling, fermentation and carbonation. Drinks such as Kappa Kandari, bringing the sting of kandari chillies and warmth of boiled tapioca into a bold tribute to Kerala’s kitchen fires; Monsoon Smoke, distilling the mood of wild coastal rains, blending tangy kudampuli with smoky warmth; and Colonial Preserve, offering a sweet-sour indulgence, where pineapple pickle and aged brandy pay homage to Cochin’s cellar secrets, transform familiar flavours into unexpected moments, offering a sensorial journey that is distinctly local and boldly innovative.
Housed within Colony Bar, known for its panoramic views of the Vypeen backwaters, The Bold Naadan redefines the cocktail experience in Kochi. Each of the nine drinks has been paired with a hand-drawn visual chapter – brought to life with details of coastal life, quiet nostalgia and Kerala’s Dutch and Portuguese legacies. Winged companions like dragonflies and moths appear across the menu, guiding guests through stories that are as layered as the pours themselves.
As part of Grand Hyatt Kochi’s continued commitment to culinary innovation, The Bold Naadan marks a new direction for its beverage program – one that balances rootedness with reinvention.
